WaterWays' Favorite Pumpkin Pie Recipe

Nothing tops off a fall day like a slice of homemade pumpkin pie. Baking is also a great way to bond with your family over something delicious! While Pumpkin Pie can be a hard one to master, it is worth all the effort and has enough steps to let every family member contribute. Kids love mashing up the fresh pumpkin and mixing ingredients together, and everyone loves taking that first bite of warm dessert.

You’ll need:

  • 1 1/3 cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup shortening
  • 3 ½ tablespoons of water
  • 2 cups of mashed, cooked pumpkin
  • 1 (12 oz) can of evaporated milk
  • 2 beaten eggs
  • ¾ cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt

Directions:

First, preheat the oven to 400 degrees. This is the perfect chance to get the kids starting to mash up the pumpkin and beat the eggs.

Mix the flour, salt, shortening and water to form the dough. Lightly flour your hands and then roll your freshly mixed dough into a ball and then roll out to about 1/8th inch thickness. Transfer dough onto the pie pan. With multiple kids, this is a great opportunity to take turns rolling the dough out!

Beat all of the filling ingredients (pumpkin, evaporated milk, eggs, sugar, cinnamon, ginger, nutmeg, salt) together in a large bowl. An adult should always operate an electric mixer!

Pour well-blended mixture into the prepared crust.

Bake for 40 minutes, or until a knife comes out clean.
