Favorite Summer Recipes

Looking for a few fresh ideas for summer treats and snacks? Look no further!

Below are a couple of recipes that are sure to be a hit at your next summer supper club, backyard pool party or family dinner.

The first of our summer recipes is a simple, yet delicious peach cobbler that bakes in just forty-five minutes. This dessert is great because it incorporates peaches, a local summer staple, and very minimal prep time.

Peach Cobbler
3 cups of fresh peaches sliced
1/4 cup white granulated sugar
1 cup milk
Another 1 cup of granulated sugar
1 cup self-rising flour
1 stick of butter

Mix peaches and 1/4 cup of sugar. Pour into buttered casserole dish. Mix milk, remaining sugar, and flour together. Then pour over peaches. Dot with sliced pieces of the stick of butter. Bake at 350 degrees for 45 minutes.

The second summer dish that we are featuring is “Southern Caviar.” This scrumptious snack is sure to be loved by all. This colorful dip takes only a few minutes to prepare and can be served with any type of Tostitos Chips (Fritos Scoops recommended).

Southern Caviar

1 can of mild Rotel
1 can of original Rotel
1 can of white corn
1 can of black beans drained and rinsed
1 bunch of cilantro chopped
3 tablespoons of Italian Dressing

Mix all ingredients together in bowl and chill before serving. Serve with Fritos Scoops or your favorite Tostitos Chips. Enjoy!!!
